Carrot Cake Cookie Mix in a Jar

This pretty jar of Carrot Cake Cookie Mix is the perfect gift for your Easter brunch hostess or even just to pre-make to have on hand this spring. Dress the jar up for Easter, or store in the pantry to use on a rainy day.

Ingredients:
1 ⅓ cup all purpose flour
½ tsp baking powder
1 tsp baking soda
¼ tsp salt
1 tsp cinnamon
½ tsp nutmeg
½ cup brown sugar
½ cup granulated sugar
1 cup rolled oats
1 cup carrot cake m&ms
½ cup chopped walnuts
½ cup shredded coconut

Twine or ribbon
Gift tags
Carrot decorations
For Baking:
1 large egg
½ cup butter melted slightly
½-⅔ cup freshly grated carrot (About two large carrots)
1 tsp vanilla
Instructions:
To make cookies in a jar: In a large bowl, stir together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Pour flour mixture into the bottom of a large quart jar. Layer remaining ingredients in jar as desired, making sure to press ingredients tightly down into the jar.
Once last ingredient is added, seal jar tightly with lid. Decorate jar as desired and attach final baking instructions.
To decorate jar: Cut fabric into 7 by 7-inch squares. Drape fabric over the lid of the jar (use a rubber band to hold fabric secure while wrapping twine around lid, if needed). Tie ribbon around the fabric to secure. Attach gift tag and decorations using twine and tie into a bow.
For baking: Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
In a large bowl whisk together egg, butter, carrot and vanilla. Stir in contents of jar, stirring until well combined.
Using a large cookie scoop, drop dough on prepared baking sheet and bake for 12-15 minutes, or until edges are golden brown and the center is set. Allow cookies to cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely. Store cookies in an airtight container for up to one week.
*Can substitute m&ms for white chocolate chips
