Ramen in a Rush! (with video)

I'm always on the lookout for quick and easy meals that are actually healthy, and I've found a winner here! These can be prepped ahead of time, and the jars make it a perfect work-week lunch!

My 17-year-old son started us on a ramen kick. Not satisfied with the cheapo, unhealthy packets that are standard fare for starving college students, he watched some videos on how to make authentic ramen. And I tell you, friends, it was EXCELLENT! He mixed up his own spice blends, added soft-boiled egg, strips of chicken thigh meat, portobello mushrooms, and bok choy, and then added ramen noodles and broth to make the best ramen I've ever had.


But now that he's off to Mexico on an internship, I have to make my own. And so we concocted this slightly simpler ramen-in-a-jar recipe that's perfect for taking to work or on other kinds of outings. The great thing about ramen is that you can customize it in a thousand different ways. You really can use whatever veggies you have on hand. I had some canned baby corn in the pantry, so I added that, and I think water chestnuts might also be fun.


Depending on how fancy you want to take it, this recipe can be made in as little as 10 minutes. You could make four jars to have lunches all week, or make a quick no-mess meal for the family.


Ingredients:

  • 4 pint-and-a-half, wide-mouth Azure Canning Co. jars (NF824)

  • 4 Tbsp chili garlic sauce (CO865)

  • 4 Tbsp Azure Market Organics coconut aminos (CO942)

  • 2 tsp grated ginger (QP162)

  • 1 package Lotus Foods Organic Jade Pearl Rice Ramen Noodles (GY1028) (each package contains 4 cakes)

  • 2 tsp garlic, diced (QP324)

  • 2-3 carrots, shredded (QP165)

  • 1/2 cup spring onion or leeks (QP262), sliced

  • 1 pack Gimme Roasted Seaweed Snack, Sea Salt, Organic (SN759)

  • 1 quart liquid chicken broth (GY058)




Optional:

  • tofu cubes or egg

  • green peas or edamame

  • diced bell pepper (about 2 diced)

  • leftover chicken or beef or rotisserie chicken (2 cups)

  • bok choy or other thinly sliced greens (2 cups)

  • mushrooms or baby corn

  • sliced lime

  • Substitute 4 tsp broth powder (QS017) plus 1 quart boiling water for liquid broth



Directions:

Gather four Azure Canning Company pint-and-a-half jars with lids. Add one-fourth of the chili garlic sauce, coconut aminos, ginger, and garlic to each jar. Add veggies, and the optional cooked chicken/tofu/other protein, distributing evenly between the jars. Add one ramen cake per jar, breaking into pieces if necessary.


Store with an airtight lid until you’re ready to eat. Lasts 4–5 days in the fridge.


When ready to serve, boil the chicken broth and pour it into the jars. Fill the jars to the top and cover with a lid. (If you need more broth, just add boiling water to fill.) Let the noodles sit in the broth for 5 minutes before eating. Top with seaweed snack sheets, torn into bite-sized pieces. Stir and enjoy!

This is RIGHT up our alley! I'm so glad I was emailed this recipe idea, which then led me to all the other JAR recipes. I LOVE this. It's exactly what I've been looking for to add to our rotation in way of lighter foods made easy (we already eat very clean and 98% organic). Also, I am already familiar with Lotus Foods Rice noodles (both Jade Pearl and the Brown Rice and Millet) as they're a staple in our house, so this is very exciting to me.
