Watermelon Cucumber Lemonade in a Jar

This refreshing beverage captures the essence of summertime with all the fruity flavors you remember from childhood! Only this one is made with real lemon, lime, watermelon, and cucumber, for an electrolyte-filled refresher on the hottest of days!


I made it for brunch, and it was a hit with both adults and kids! It's pretty and practical when poured and served from our Azure Canning Co. wide-mouth pint jars, with a stainless steel drinking straw (HA194).



Watermelon Cucumber Lemonade


Ingredients:

  • 1 lime, juiced (QP061)

  • ½ cup lemon juice (JS025)

  • ½ cup honey (SW355)

  • 5 cups watermelon, cut into cubes (QP309)

  • 1 cucumber, peeled and sliced (QP1121)

  • ¼ Tbsp ginger (QP162)

  • 2 cups water


Instructions:

  1. Add lime juice, lemon juice, and honey to a pitcher and whisk together until the honey is dissolved. (I used this great stainless steel juicing lid (NF2381) by Mason Jar Lifestyle--read our review and how much we love them here).


  2. Place 4 cups of watermelon, the cucumber (reserve a few slices for step 4), and the ginger into a blender.


  3. Blend on high speed until combined.


  4. Pour watermelon mixture into a fine-mesh strainer placed over the pitcher (I used a colander (HA201)). Use a spoon to stir through the mixture, making sure every last drop of liquid goes into the pitcher. You might have to work in batches and clean out the pulp in-between each batch.


  5. Add water and the remaining cup of cubed watermelon to the pitcher, and give everything another stir.


  6. Let it chill in the refrigerator for 30 minutes or longer, so the flavors can really blend together, and serve over ice with a star-shaped piece of watermelon!
