It's Lime Time! Single Serving NO BAKE Key Lime Pie In A Jar

If you have kids in the house, you know that there's always drama around who got the larger serving! "He got more!" is a common refrain at dessert time - though, oddly enough, I don't hear this argument occur too often when it's time for vegetable servings! And, maybe if we are honest, some adults also deal with this serving size struggle, too.


This is why I really like making desserts in Azure Canning Co. jars! It's easy to ensure everyone gets their fair share when you pre-measure into glass jars. It also makes it super easy to control portion size, so I'm not tempted to sneak off another little sliver of pie.


Our family is now visiting the beach, so Key Lime Pie was a must. Only this time, I made it in our jars, and we could grab it and eat it on the beach as we watched the sunset! No mess, no sand, no bickering…just a little taste of the tropical while seaside. Imagine how easy this would be to take while traveling, or make ahead and enjoy on the deck. It's a no-mess way to eat on a picnic or even for a fun living room sleepover with the kids! When you're finished, toss the jars in the dishwasher, and you're done!


I used Pamela's Gluten-Free Honey Grahams (SN934). These are hands-down the best graham crackers I have ever eaten. They are buttery and crispy and have just a hint of cinnamon and honey. Because the crust doesn't have to hold together, I didn't even add any butter; I just poured the cracker crumbs in. Yum.

Next, I blended a bar of Organic Valley Cream Cheese (CH1114) with some Azure Sweetened Condensed Coconut Milk (GY1453), lime juice, and lime zest.



Below is a recipe for two, but you can double it for more:


1 pkg Pamela's Gluten-Free Honey Grahams (SN934)

1 8 oz pkg Organic Valley Cream Cheese (CH1114)

1 can Azure Sweetened Condensed Coconut Milk (GY1453)

1/3 cup lime juice (about 4 limes)

2 Tbsp lime zest (grated lime peel)

Additional lime slices for garnish

Whipped cream


Pour the grahams into your blender and pulse until they are crushed evenly. Divide your graham crumbles so you'll have enough for two layers of crumbs in each jar. Pour into the bottom of the jar. Then, blend the cream cheese, sweetened condensed coconut milk, lime juice, and lime zest together. Again, divide so you'll have enough for two layers per jar. Repeat with a second layer of crumbs and a second layer of cream cheese-lime mixture. Top with whipped cream, a slice of lime, and a graham cracker. Refrigerate to allow everything to cool and the creamy mixture to thicken. Eat with a spoon! Feel free to experiment using maple syrup or honey, and sweeten to your liking.
